When rubber-stamping the new vintage of the Seraph Sauvignon, one of your all-time favourite wines, winemaker Francois Chainier happened to mention an exciting stash of top-drawer boutique Sauvignon he'd been holding back for someone else. But, as I got there first we got the wine! Made using the best grapes from the Chainier family estate this is a straight up, classy swipe at fine Pouilly Fume. Fine and minerally with intense fruit.
